I love this recipe for what is essentially an Anzac biscuit-however you like it.
Remember the Choose Your Own Adventure books? You wanted the story but you took the paths that looked good to you.
So when you are making this recipe you can use different versions of flour, sweetener etc depending on what you like and what you have on hand. They can be made dairy or wheat free or even vegan.
And the best bit- they are so very easy to make. Get baking!
Choose Your Own Adventure Oat Biscuits
(I have highlighted in bold which specific ingredients I have used)
150g butter chopped. You could use a dairy free option of this is you needed to but butter is better.
1/2 cup sugar. Use rapadura, white, caster, brown, coconut etc. It just needs to be granulated.
2 tablespoons liquid sweetener. Honey, golden syrup, coconut nectar, maple syrup.
1 1/2 cups rolled oats. If you are gluten free and can’t tolerate oats (most can)you could use rolled rice flakes or coconut chips or quinoa flakes.
1 cup plain flour. So many types! Go from plain white right, spelt, wholemeal, buckwheat, rice, sprouted etc etc.
1/2 cup of dessicated coconut.
1/2 teaspoon bi-carb soda or baking powder.
Preheat the oven to 160 degrees.
Line a couple of trays with baking paper.
Melt the butter and add your sweeteners-both the granulated and liquid. heat over a low flame together until they are combined.
Mix all the dry ingredients together and then add the wet and combine the whole lot.
Roll into little balls and put on the lined trays, squash them with a fork a little when you’re all done.
You should get about 24 balls depending on how much mixture you eat while it’s still raw.
Cook for about 15 minutes. A little less if you like them chewy and a little more if you like them crunchy.
I have no idea how long they keep for because ours are all gone in a couple of days!
I use this recipe often and vary the ingredients and I’m yet to have a total disaster.

I used to love choose your own adventure books at school
And these bikkies look delicious, I might have to give the gluten free version a go.
I love this recipe, I have been making Momofuku -like compost cookies and adding leftover broken pretzels and whatever choc chips etc remain in cupboard, oats, the base mix of this bikkies is way better than theirs. Thanks
